Macy's cooking demo with Chef Hiroshi Fukui

Chef Hiroshi Fukui of Hiroshi's Eurasian Tapas offered a sneak peek Saturday of a dish he'll be serving at September's Hawai'i Food & Wine Festival. The cooking demo, held at the Ala Moana location of festival sponsor Macy's, was the first of a series of four preview chef events that will continue through the summer.

Fukui prepared his sous vide opah and Hau'ula tomato "lomi" with Thai basil and miso-ginger brown butter sauce.

After the demo, Fukui says he hopes that by the start of the festival, he'll be able to substitute the opah with butterfish grown on the Big Island. He said he hasn't been able to serve the butterfish in his restaurant for awhile due to issues the grower has been having finding a suitable feed for the fish. After changing to a new feed, however, the grower is optimistic he'll have enough butterfish to feed guests at the Hawai'i Food & Wine Festival in September.
