Hailing from Toyama, a coastal city on the Sea of Japan, Chef Ryo Takatsuka always had a fascination and appreciation for food. After graduating high school Takatsuka moved to Italy to learn more about his favorite type of cuisine, Italian. He spent the next ten years in Italy mastering the heart and essence of Italian cuisine in restaurants such as Ristorante Il Sogno di Angelo, La Spezia, and Hotel Eden La Terrazza, Roma both Michelin starred restaurants. Takatsuka went on to work with his mentor Chef Giancarlo Perbellini in Verona where he worked his way up to Sous Chef, a position he held for four and a half years, while retaining the restaurant’s two Michelin stars.

Takatsuka returned to his native Japan in 2008 to take up his first Chef de Cuisine position as the head chef for one of the oldest and highly acclaimed Yamazaki restaurants in Tokyo. Under his guidance, the restaurant created a following and reputation for offering authentic Italian cuisine; gaining many awards in the process including a Bronze Egg in the Ryorinin Emerging Dream competition, tasked with promoting emerging talent.

Today Takatsuka takes the helm for Noe, the signature Italian restaurant at the newest Four Seasons Resort Oahu at Ko’Olina, after his most recent post at the three Michelin Star restaurant, Kagurazaka Isikawa. He brings over fifteen years of experience and a contagious passion for food. Noe is destined for a bright future in not only Oahu but on the world stage as a destination restaurant for authentic and unexpected Italian cuisine.
