The Fuchu Homare brewery was founded in 1854, managed by 7th generation of the family; Takaaki Yamauchi. The brewery revived the Watari Bune sake rice after it had been extinct over more than fifty years. Watari Bune is an heirloom, or pure varietal, and the parent strain to Yamada Nishiki, the most famous sake rice.
Takaaki Yamauchi is the president of the Fuchu Homare brewery as well as the brew master who manages the entire sake making at the brewery.
